CINNAMON DONUTS / SNACK IDEAS
Gluten-Free / Dairy-Free / Makes 10
A delicious soft and fluffy baked cinnamon donut recipe! A blend of a few different recipes and a change of a few ingredients to make it gluten free, dairy free and guilt free. A super simple treat to enjoy, however they are so delicious you may not stop at one!
85 grams almond flour
120 grams white rice flour
60 grams corn flour
2 teaspoons baking powder
1 ½ teaspoons ground cinnamon
½ teaspoon salt
½ cup + 2 tablespoons rice malt syrup
½ cup + 2 tablespoons coconut milk
60 grams white granulated sugar
1 teaspoon ground cinnamon
Preheat the oven to 180°C on a fan force setting and spray your donut trays with cooking oil spray so they don’t stick. Here is the donut tray I used and I cooked one batch of 6 first and then baked the additional 4 donuts. Depending on which tray you use it will change the number of donuts you get.
In a large bowl, combine the almond flour, white rice flour, corn flour, baking powder, cinnamon and salt using a whisk to ensure there are no lumps.
Add the rice malt syrup and coconut milk to the dry ingredients and continue to whisk until the batter is smooth and resembles a cake batter.
Add the batter to your prepared donut trays. Carefully spoon the mixture in or use an icing bag if you prefer. Using a spoon takes patience, but you can do it! Make sure to leave a small amount of space from the top of the tray so that the donut has room to rise.
Bake at 180°C for 12 minutes on the fan force setting or equivalent. You may need to bake up to 15 minutes depending on your oven. Test with a skewer and if it comes out clean or with a few crumbs they are ok.
Take the donuts out of the oven and leave the donuts to sit for 5 minutes in the pan. Prepare the cinnamon sugar in a separate bowl whilst the donuts are cooling.
Using a cooking brush coat the top side lightly with coconut milk. If you don’t have the ability to do this you can just coat the bottom of the donut with the cinnamon by dipping it straight into the bowl as it will stick due to the cooking oil. This will mean that you only have cinnamon sugar on one side.
Continue coating each donut and enjoy them whilst they are warm. Store extras (if any) in an airtight container to enjoy later!
